Get To Know Us
La Bondad Fresca started the way most good bakeries do — with one cake, for one friend, made in a home kitchen in Chennai. Nina baked it because someone she loved had gone vegan and could not find a birthday cake worth eating. Word travelled the way it does here: a cousin, a neighbour, a colleague’s wedding. Within a year Nina was baking more for other people than for herself, and La Bondad Fresca had a name.
What we bake
Small-batch, made to order, nothing sitting on a shelf. Celebration cakes and everyday bakes, breads and pastry, in both classic and vegan versions — because a table usually has both kinds of eater at it, and nobody should get the lesser slice. We bake to order rather than to stock, which means we bake less and we bake it fresher.
How we work
Everything is made in small batches, by hand, in our own kitchen. We buy well and we don’t cut corners: real butter in the classic bakes, and properly developed alternatives in the vegan ones rather than whatever happens to be dairy-free. Sourdough is fermented slowly, over a day and a night, because that is how it gets its flavour. Orders go in a few days ahead so nothing is rushed.
Why vegan matters to us
Vegan baking here is not an afterthought or a substitute menu. Nina spent years rebuilding classic French patisserie recipes so the vegan version stands on its own — a sponge with the right crumb, a buttercream that holds. That work became the thing we are best known for, and it is why the vegan bakes carry the same price and the same care as everything else.
Teaching what we know
Our classes grew out of the same question, asked over and over: how did you make this? Academia La Bondad Fresca runs hands-on baking classes and cooking workshops in Chennai for beginners and for home bakers who want to go further, capped at eight people so everyone gets real attention. Every recipe is taught twice, classic and vegan, so you can bake for whoever is at your table.
Meet Nina
Nina George trained in classic French patisserie and specialises in layered celebration cakes, vegan sponges and choux. She founded La Bondad Fresca out of her home kitchen and still bakes every order herself. She teaches the cake and pastry classes, is unbothered by mess, and firm about resting your dough.
Whether you want a cake for Saturday, a standing order of bread, or a seat in a class — we’d love to hear from you. Get in touch and tell us what you’re planning.
