Academia La Bondad Fresca
Small-batch baking, taught the way Nina learned it: hands in the dough, no shortcuts, everyone goes home with what they made. Academia La Bondad Fresca runs weekend baking classes and cooking workshops for complete beginners and for home bakers who want to go further. Classes cap at eight people, so you get real attention, and every session covers both a classic and a vegan version of the bake.Type your paragraph here
Why bake with us —
Eight seats, never more. You work at your own station, with your own dough, from start to finish
Every recipe, two ways. Nina teaches the classic method alongside a vegan version, so you can bake for anyone at your table.
Take it home. You leave with everything you baked, the printed recipe and a starter kit for your first bake at home.
Meet your chefs
Nina George — Founder and Head Baker
Nina started La Bondad Fresca in her home kitchen, baking celebration cakes for friends, and word of mouth did the rest. She trained in classic French patisserie and spent years adapting those recipes for vegan bakers after her own family went plant-based. She specialises in layered celebration cakes, vegan sponges and choux. She teaches the cake and pastry classes, and is known for being unbothered by mess and firm about resting your dough.
Chef Arun Menon — Breads and Viennoiserie
Arun comes from a hotel-kitchen background, where he ran the bread section for close to a decade before moving into teaching. He works with long-fermented sourdough, laminated doughs and regional Indian breads. He specialises in sourdough, croissants and enriched breads. His classes go deep on timing, temperature and how to read a dough by touch rather than by clock.
